Crispy on the outside, soft and savory inside — perfect as a side dish or snack!

Ingredients:
4 large potatoes, peeled and finely grated
1 small onion, finely grated
2 cloves garlic, finely grated
1 egg
1 tsp salt
½ tsp black pepper
All-purpose flour (roughly ½ of a cup-enough to form a thick batter)
Oil for frying (Avocado oil recommended)

 

Instructions:

  1. In a large bowl, combine grated potatoes, onion, and garlic.
  2. Add egg, salt, and pepper; mix well.
  3. Stir in flour gradually until the mixture is thick and gooey.
  4. Heat oil in a frying pan over medium-high heat.
  5. Spoon batter into the pan, flattening slightly to form pancakes.
  6. Fry until golden brown and crisp on both sides.
  7. Transfer to a paper towel-lined plate to drain excess oil.
  8. Serve hot—enjoy plain, or with sour cream or applesauce!

Tip: For extra crispiness, squeeze excess liquid from the grated potatoes before mixing.
