Dough
• 1 stick (½ cup) salted butter, softened
• 4 oz cream cheese, softened
• 1¼ cups all-purpose flour, sifted
Filling
• 1 cup jam or pastry filling of your choice
Optional
• 1 egg, beaten (for egg wash)
• Powdered sugar, for dusting
- Make the dough – In a bowl, mix the flour, cream cheese, and butter until fully combined. The dough may be crumbly at first; knead gently with your hands until smooth.
- Chill the dough – Wrap the dough in plastic wrap and place it in the freezer for 10–15 minutes to firm up.
- Roll the dough – On a lightly floured surface, roll the dough into a rectangle about ⅛ inch thick.
- Cut the dough – Cut the dough into squares about 2½ inches each.
- Fill and shape – Place 1 teaspoon of filling in the center of each square. Fold opposite corners of the dough toward the center and press together to seal. Brush lightly with egg wash if needed to help them stick.
- Prepare for baking – Place the kolacky on a parchment-lined baking sheet.
- Bake – Preheat the oven to 340°F (170°C). Bake for 12–15 minutes, or until lightly golden. Let the cookies cool slightly, then sprinkle with powdered sugar before serving.
