Ingredients:
4 white fish fillets (cod, haddock, or flounder)
2 cups all-purpose flour
1 tsp hot paprika
3 tsp paprika
4 tbsp fish seasoning
(pepper, salt, oregano, basil, coriander, etc.)
2 large eggs
3 tbsp mayonnaise
3 tbsp heavy cream
4 tbsp shortening (Crisco) or olive oil, for frying
(Tip: more fat = better crust!)
3 cups finely crushed corn flakes or panko breadcrumbs
Instructions:
- Rinse fish and pat completely dry. Set aside. Mix flour, hot paprika, paprika, and fish seasoning in a large bowl or tray. In a separate bowl, whisk eggs, mayonnaise, and heavy cream until smooth.
- Coat fillets in the flour mixture and let rest 5–10 minutes. Heat a cast iron pan over medium-high heat. Add shortening or oil and heat until shimmering.Coat fillets again in flour, dip into egg mixture, then coat thoroughly in corn flakes or panko.
- Fry fillets 5–7 minutes per side, until golden brown and cooked through. Add butter on top while frying if desired. Serve hot with tartar sauce and sides like coleslaw, potato salad, fries, or all three (no judgment).
