Spaetzle Ingredients:
4 medium/large potatoes peeled and finely grated
2 cups of flour
1 egg
1 tsp of salt

Sauce Ingredients:
½ stick of butter
1 cup whole milk

Topping Ingredients:
1 onion diced
1 pack of bacon diced

  • Sauté your bacon and onions and set aside for later.
  • In a large bowl, combine all of the spaetzle ingredients. Your spaetzle dough will be thick and sticky. Boil a large pot of salted water. Hold the mixing bowl of dough over the pot of boiling water. Using a small spoon (or spaetzle maker), scrape small portions of the dough into the boiling water. Try to keep the pieces uniform in size for even cooking. Cook for about 2-4 minutes or until they float Use a slotted spoon to remove the spaetzle and transfer to a colander.
  • In a separate pot add the ingredients for the sauce, stirring often so it does not stick, keep the heat on low. Once the sauce is ready, add your dumplings and stir together.
  • Top with sautéed onions and bacon and enjoy!
