2 eggs
½ cup of sugar
½ cup of Raw Honey
½ stick of butter
½ tsp ground cloves
¼ tsp salt
1 tsp baking powder
1 tsp cinnamon
3 ¼ cups of all-purpose flour
Lemon zest (optional)

In a medium saucepan, melt butter and sugar until blended. Add honey and remove from heat.

In a separate mixing bowl (I use a stand mixer), combine your dry ingredients. Add the lemon zest and eggs. Then add your honey mixture and mix until all incorporated. Cover the dough and let it rest in the refrigerator for 3 hours or overnight if possible.

Roll out your dough on a lightly floured surface. Cut into shapes of your choice and place on a cookie sheet. Bake at 350 degrees for 8-10 minutes.

Optional Frosting: Feel free to decorate your cookies with Royal icing after they cool. Ingredients: 3 egg whites, 1 pound of powdered sugar, & 1 tsp of (Vanilla Extract or Lemon Extract). Using a mixer, beat the egg whites until frothy, slowly add in the powdered sugar and vanilla OR lemon extract. Continue mixing at medium speed until stiff peaks form. Add food coloring if desired. Transfer to piping bags and decorate your cookies.
